Make This!: Pumpkin Spice Cookies

In the midst of cleaning out my pantry to get ready to move I had a can of pumpkin that I really wanted to turn into something yummy.

A few clicks online and I found the most ridiculously easy recipe ever. Two ingredients turn into delicious cookies.

Pumpkin Spice Cookies

1 can pumpkin (not pumpkin pie mix!)

1 box spice cake mix

1/2 c. water

Mix together. I used a scoop so they would all be the same size. These don’t change much after baking so try to make sure they don’t come out too funky looking!

 

I used my small Pampered Chef scoop and these took about 10 minutes at 400.

After they were done I did a quick swirl of (store-bought!) cream cheese frosting over the top. SO. YUMMY! These are dangerous because they are one bit each so I keep grabbing one every time I walk by.

Rushing to pull out a baking sheet and my Pampered Chef stone met my tile floors. I am not a happy camper. One of my friends let me know it has a lifetime warranty but I can’t find my dang receipt! I’ve only had this sucker for 9 months!

Advice needed from my moving military mommas

So doing the express shipment this week and I’m trying to figure out what to pack. Have an idea of some basics, but I would love to hear some advice about what you needed/didn’t need and what were kicking yourself for not packing!

Our situation:

We are doing our express shipment/unaccompanied baggage shipment first, HHG pack out last. We are doing this on the *very* slim chance that we’ll actually get a house within two months. So we’ll need household stuff, kitchen stuff, things so that we can live in an empty house (although hopefully we can get loaner furniture)

So all my seasoned travelers, what to bring??

It’s The Little Things: {Faro & Farewells}

Yay, one of my favorite link ups is back, Lindsey from Hello Hue!

Here are my little things that made me smile this week:

Finally getting to Portugal! We took a day trip to Faro, which is right over the border from Spain. Had a wonderful family day together and enjoyed some beautiful weather!

I also enjoyed a wonderful lunch out with my coworkers this week. Today was my last day of work and it was very sad. I HATE goodbyes, and thankfully could put some of them off because I’ll be stopping back in but it sucks! Some of the Spanish friends I have made are some of the funnest people I know and I will miss them dearly! So instead of adios, I am saying hasta luego. I hope I will see them again someday.

Two. More. Weeks! I can’t believe we are so close to leaving! I am trying not to have a panic attack because looking at my house, it is impossible to imagine that we are really packing out soon!

Hello Hue Little Things

Going Away Lunch

There are two of us getting ready to PCS soon at work. We decided to all go out together for a quick lunch for a final farewell. It was at one of my favorite places, Las Tinajas.  We had a really nice lunch, the only thing missing was the sangria!

 

Me and Ladonna, my partner in crime at work. We keep the sarcasm level up around the place. I am really trying to figure out a way to smuggle her to Hawaii with me!

Renee and Patricia, our director and assistant director. Patricia is on her way to Germany, so we are headed to opposite ends of the globe. Renee actually was the CDC director in Hawaii before Rota, small world! (Also my bosses are a LOT of fun!)

And center stage, my delicious brocheta, basically a kabob. The is the chef style, beef, chorizo, bacon and veggies. Served over fried potato slices. Heaven on a plate.

Eat This: Nutella S’mores

Oh how many years I have wasted not eating these! I was sitting around thinking to myself that I could REALLY go for some s’mores (what? it’s summer, don’t judge me!) but I am not the person who has Hershey bars just randomly sitting around my house. (those suckers are GONE within a day)

What do I keep on hand? Nutella. Once I thought of this I was astonished I’ve never heard of these before. (Yes I am sure millions of people have but I am a bit of a Nutella addict and I was surprised that this isn’t all over the place.)

Of course this is ridiculously easy and doesn’t really need directions, but you need to have these in your mouth!

The cast of characters. And even if you are like me and have a box of graham crackers that were slightly stale and some marshmallows starting to stick together, I promise these will still be yummy!

Some of this action needs to happen.  Those marshmallows were roasted over an open electric burner. The firepit was just too much work. I am not proud of this.

C’mon, you don’t really need instructions right? The moment you even read Nutella s’mores you were already digging in your cabinets.
